Order a teishoku and you get a tray: a bowl of rice, a bowl of miso soup, a main dish such as grilled fish or fried pork, a small vegetable dish and pickles. The structure is fixed even when the main changes, and it is the cheapest way to eat a balanced meal in Japan. Rice refills are often free.

定食を頼むと、盆で出てきます。ご飯茶碗、味噌汁の椀、焼き魚や揚げ物などの主菜、小鉢、漬物。主菜が変わっても組み立ては変わりません。日本でいちばん安くきちんとした一食をとる方法でもあります。ご飯のおかわりが無料の店も多いです。

A teishoku is the standard Japanese set meal, and learning to read it makes eating out much easier. The tray has a fixed structure: rice, miso soup, a main dish, one or two small side dishes and pickles. Only the main changes, so a shop will offer a grilled mackerel set, a fried pork set, a ginger pork set, and so on, at similar prices.

The arrangement on the tray is also conventional, with rice on the left, soup on the right and the main behind. You are meant to eat around the tray rather than finishing one dish at a time, alternating rice with the seasoned dishes, which is why the rice is not seasoned.

For a traveler this is the most reliable lunch in Japan: it is fast, it is usually under a thousand yen, it includes vegetables, and many shops give you free refills of rice if you ask. The formal name for the underlying structure is ichiju sansai, one soup and three dishes, and it is the same shape as a home dinner.

定食は日本の標準的な一食の形で、読み方が分かると外食がずっと楽になります。盆の上の組み立ては決まっています。ご飯、味噌汁、主菜、小鉢が一つか二つ、そして漬物。変わるのは主菜だけなので、店には焼き鯖定食、とんかつ定食、生姜焼き定食が、似た値段で並びます。

盆の上の置き方にも決まりがあり、ご飯を左、汁物を右、主菜を奥に置きます。食べ方は、一品ずつ片づけるのではなく、盆の上を行き来して、ご飯と味の付いたおかずを交互に口へ運びます。ご飯に味を付けないのは、そのためです。

旅行の方には、これが日本でいちばん確かな昼食です。早く、たいてい千円までで、野菜も付き、頼めばご飯のおかわりが無料の店も多い。この組み立ての正式な呼び名は一汁三菜で、家庭の夕飯と同じ形です。

In many shops yes, and it is often free. Hand over the bowl when you ask, and it is polite not to request a refill if you have already left rice in it.

多くの店でできますし、無料のことも多いです。頼むときは茶碗を差し出します。ご飯を残したまま、おかわりを頼まないのが礼儀です。

QWhy is the soup on the right and the rice on the left?

どうして汁が右で、ご飯が左なのですか。

It is the conventional arrangement, and it also puts the rice bowl where the left hand lifts it while the right hand holds the chopsticks. Reversing it is noticed in the way a mirrored place setting would be in Europe.

そう決まっているからで、左手で茶碗を持ち、右手で箸を使う形にも合っています。逆に置くと、西洋で食器を左右逆に並べたときと同じように気づかれます。

QIs the small dish part of the meal or a starter?

小鉢は食事の一部ですか、前菜ですか。

It is part of the meal. Everything arrives together and is eaten in alternation, so there is no course order to follow. Soup is drunk from the bowl rather than spooned.

一食の一部です。すべて一度に出てきて、行き来しながら食べるので、順番はありません。汁物はさじを使わず、椀を持って口をつけます。

豆知識

一汁三菜という言い方は、汁物一つに主菜と副菜を合わせて三品、という組み立てを指します。定食屋の盆はこの形をそのまま出しています。置き方は、手前左にご飯、手前右に汁物、奥に主菜と副菜が基本です。学校給食も、社員食堂も、旅館の朝食も、多くがこの並びをなぞっています。店によっては、ご飯の量を大盛り・普通・少なめから選べ、値段が変わらないことも珍しくありません。券売機で食券を買う店も多く、席に着く前に注文が済むので、昼の混雑がさばけるようになっています。
