Osechi is served on New Year's Day in stacked lacquer boxes. Every dish is chosen for a meaning, usually a pun: herring roe for many children, black beans for working hard, rolled kelp for joy. Almost everything is sweetened, salted or vinegared so that it keeps without cooking, because the point is that nobody works in the kitchen for three days.

おせちは元日に重箱で出されます。どの料理にも意味があり、多くは語呂合わせです。数の子は子孫繁栄、黒豆はまめに働く、昆布巻きは喜ぶ。ほとんどが甘く、塩辛く、あるいは酢で調えてあり、調理せずに日もちするようになっています。三が日は台所に立たない、というのが眼目だからです。

Osechi is the food eaten at New Year, served cold in stacked lacquer boxes that are opened on the table. What makes it interesting is that almost every item means something, and the meanings are mostly puns. Herring roe stands for having many children, because of the number of eggs.

Black beans mean working diligently, because the word for bean sounds like the word for earnest. Rolled kelp sounds like the word for rejoice. Prawns are bent like an old person's back, so they mean living to a great age. Beyond the wordplay there is a practical reason for the whole thing.

Everything is preserved by sugar, salt or vinegar so that it lasts for days without cooking. The tradition says this is so that the household does not disturb the kitchen deity, but the plainer version is that it gives whoever normally cooks three days off. These days a lot of families order osechi from a department store rather than making it.

おせちは正月に食べる料理で、重箱に詰めて冷たいまま食卓で開きます。面白いのは、ほとんどの品に意味があり、その多くが語呂合わせだということです。数の子は卵の多さから子孫繁栄。

黒豆は「まめに働く」に通じます。昆布巻きは「よろこぶ」。えびは腰の曲がった姿から長寿。言葉遊びの先に、実際的な理由もあります。すべてが砂糖・塩・酢で調えてあり、調理せずに数日もつようになっています。

伝承では、台所の神を騒がせないためと説明されますが、もっと平たく言えば、いつも料理をする人に三日間の休みを与えるためです。近年は作らず、百貨店で注文する家庭も多くなりました。

Yes, that is the design. Everything is preserved so it can be taken straight from the box. Ozoni, a soup with rice cake, is the one hot dish served alongside it.

冷たいまま食べます。そう作られています。保存が効くので、重箱から直接取り分けます。温かいのは、隣に出る餅入りの雑煮だけです。

QDo people still make it?

いまも家で作るのですか。

Fewer every year. Making a full set takes days, so many households buy a prepared set from a department store or a shop, ordered in autumn. Some make two or three dishes and buy the rest.

作る家庭は年々減っています。一式作るには何日もかかるので、秋のうちに百貨店や店で予約して買う家が多くあります。二、三品だけ作って残りを買う家もあります。

QWhy does everything taste sweet?

どうして全体的に甘いのですか。

Sugar is a preservative. So is salt and so is vinegar, and osechi uses all three heavily because the food has to survive several days without refrigeration or reheating.

砂糖は保存料だからです。塩も酢も同じで、おせちはその三つを強く使います。冷蔵も再加熱もせずに数日もたせる必要があるからです。

豆知識

「おせち」は「御節供(おせちく)」の略で、もとは節句に神に供えた料理を指した。重箱に詰めるのは「めでたさを重ねる」意味とされ、正式には四段重で、五段目は空にして神から授かる福を入れる場所とする流儀もある。詰める料理の意味は語呂合わせが中心で、数の子(子孫繁栄)、黒豆(まめに働く)、田作り(豊作。いわしを田の肥料にしたことに由来)、昆布巻き(よろこぶ)、伊達巻(巻物=学問)、栗きんとん(金団=金運)などがある。雑煮は地域差が大きく、関東は角餅・すまし汁、関西は丸餅・白味噌が代表的とされる。百貨店の予約おせちは9月ごろから販売が始まる。
