A teishoku is the standard Japanese set meal, and learning to read it makes eating out much easier. The tray has a fixed structure: rice, miso soup, a main dish, one or two small side dishes and pickles. Only the main changes, so a shop will offer a grilled mackerel set, a fried pork set, a ginger pork set, and so on, at similar prices.

The arrangement on the tray is also conventional, with rice on the left, soup on the right and the main behind. You are meant to eat around the tray rather than finishing one dish at a time, alternating rice with the seasoned dishes, which is why the rice is not seasoned.

For a traveler this is the most reliable lunch in Japan: it is fast, it is usually under a thousand yen, it includes vegetables, and many shops give you free refills of rice if you ask. The formal name for the underlying structure is ichiju sansai, one soup and three dishes, and it is the same shape as a home dinner.

定食は日本の標準的な一食の形で、読み方が分かると外食がずっと楽になります。盆の上の組み立ては決まっています。ご飯、味噌汁、主菜、小鉢が一つか二つ、そして漬物。変わるのは主菜だけなので、店には焼き鯖定食、とんかつ定食、生姜焼き定食が、似た値段で並びます。

盆の上の置き方にも決まりがあり、ご飯を左、汁物を右、主菜を奥に置きます。食べ方は、一品ずつ片づけるのではなく、盆の上を行き来して、ご飯と味の付いたおかずを交互に口へ運びます。ご飯に味を付けないのは、そのためです。

旅行の方には、これが日本でいちばん確かな昼食です。早く、たいてい千円までで、野菜も付き、頼めばご飯のおかわりが無料の店も多い。この組み立ての正式な呼び名は一汁三菜で、家庭の夕飯と同じ形です。

Background (Japanese)

一汁三菜という言い方は、汁物一つに主菜と副菜を合わせて三品、という組み立てを指します。定食屋の盆はこの形をそのまま出しています。置き方は、手前左にご飯、手前右に汁物、奥に主菜と副菜が基本です。学校給食も、社員食堂も、旅館の朝食も、多くがこの並びをなぞっています。店によっては、ご飯の量を大盛り・普通・少なめから選べ、値段が変わらないことも珍しくありません。券売機で食券を買う店も多く、席に着く前に注文が済むので、昼の混雑がさばけるようになっています。
