Washoku is the word for traditional Japanese cuisine, and it describes a whole approach rather than a list of dishes. The standard shape of a meal is rice, one soup and three side dishes.

Seasoning is deliberately restrained, because the aim is for the ingredient to taste of itself rather than of the sauce. What is in season decides what is cooked, and the same dish will look different in spring and autumn. Presentation counts as part of the cooking, not decoration added afterwards.

Parts of it are. It is low in fat and high in fish and vegetables. But it is also high in salt, from soy sauce, miso and pickles, and Japan has one of the higher salt intakes among wealthy countries.
