Shochu is distilled, unlike sake, which is brewed. It is usually around 25 percent alcohol and is made from sweet potato, barley, rice, brown sugar or buckwheat, each giving a very different character. People drink it cut with hot water in winter, with cold water or soda in summer, or over ice. It is strongly associated with Kyushu, in the southwest, where distilleries and local styles are concentrated.

Visitors often assume that Japanese alcohol means sake, but in much of the country the everyday drink is shochu. The difference is fundamental: sake is brewed like beer or wine, while shochu is distilled like whisky or vodka. It is usually bottled around twenty-five percent alcohol, which is strong enough that almost nobody drinks it neat.

The standard ways are oyuwari, cut with hot water, which is the winter default and brings out the aroma, and mizuwari with cold water, or with soda over ice. The raw material decides the character. Sweet potato shochu from Kagoshima is earthy and pungent and divides opinion sharply.

Barley shochu from Oita is lighter and easier for a beginner. There are also rice, brown sugar and buckwheat versions. Certain regional types have protected geographical indications. In an izakaya you often buy a bottle, keep it behind the counter with your name on it, and come back to it.

外国から来た人は日本の酒といえば日本酒だと思いがちですが、国内の多くの地域で日常の酒は焼酎です。違いは根本的で、日本酒はビールやワインのように醸造するのに対し、焼酎はウイスキーやウォッカのように蒸留します。

度数はふつう25パーセントほどで、そのまま飲む人はほとんどいない強さです。標準的なのはお湯割りで、冬の定番であり香りが立ちます。ほかに水割り、氷を入れた炭酸割りがあります。性格を決めるのは原料です。鹿児島の芋焼酎は土のような強い香りで、好き嫌いがはっきり分かれます。

大分の麦焼酎は軽く、初めての人にも飲みやすいです。米、黒糖、そばのものもあります。地域によっては地理的表示の保護を受けている種類もあります。居酒屋では一本買って名前を書いてカウンターに預け、また来て飲む「ボトルキープ」がよく行われます。

Sake is brewed from rice and is typically around fifteen percent alcohol. Shochu is distilled, is usually around twenty-five percent, and can be made from sweet potato, barley, rice and other ingredients. They taste nothing alike, and shochu is normally diluted before drinking.

日本酒は米から醸造し、度数はふつう15パーセントほどです。焼酎は蒸留酒で、ふつう25パーセントほど、さつまいも・麦・米などから作れます。味はまったく似ておらず、焼酎はふつう割って飲みます。

QHow should I order it the first time?

初めて頼むときは、どう言えばいいですか。

Ask for barley shochu with hot water if it is cold, or with soda if it is not. Say the proportion if you want it weaker, for example six parts water to four parts shochu. If you want to try the famous sweet potato style, order a small glass first, because the aroma is strong.

寒ければ麦焼酎のお湯割り、そうでなければ炭酸割りを頼んでください。薄めにしたければ、六対四のようにお湯と焼酎の割合を伝えます。有名な芋焼酎を試したいなら、香りが強いのでまず小さなグラスで頼むのが無難です。

A kept bottle. You buy a whole bottle at an izakaya, drink part of it, and the staff store it with your name on a tag until your next visit, usually for a few months. It works out cheaper than ordering by the glass and is a sign that you are a regular.

ボトルキープです。居酒屋で一本買い、一部を飲み、残りは名札をつけて次に来るまで店が預かります。たいてい数か月です。グラスで頼むより安くつき、常連である印にもなります。

焼酎は日本酒の一種だ、と思われがちです。

FACTSake is brewed and shochu is distilled, which puts shochu closer to whisky or vodka in how it is made, and it is usually about ten percentage points stronger.

日本酒は醸造酒、焼酎は蒸留酒です。作り方の上ではウイスキーやウォッカに近く、度数もおよそ10ポイント高いのがふつうです。

豆知識

焼酎は蒸留酒で、単式蒸留で原料の風味を残す「本格焼酎」と、連続式蒸留でくせの少ない「甲類」に大きく分かれます。原料は芋、麦、米、黒糖、そば、栗などがあり、黒糖焼酎は奄美群島でのみ製造が認められています。壱岐焼酎、球磨焼酎、薩摩焼酎、琉球泡盛などは地理的表示の保護を受けています。九州が生産と消費の中心で、鹿児島や宮崎では家庭の日常の酒として飲まれてきました。飲み方はお湯割り、水割り、炭酸割り、ロックが一般的で、鹿児島には前の晩から水で割っておき当日温める「前割り」という飲み方もあります。2000年代前半には芋焼酎が全国的な人気となり、一部の銘柄が入手困難になったこともありました。
