Japan's first whisky distillery opened in 1923 near Kyoto, set up by a drinks company owner and a young chemist who had studied distilling in Scotland. The style follows Scotch closely. Japanese whisky won major international awards from the 2000s, demand rose sharply, and because sales had collapsed in the 1990s and little was laid down then, aged bottles ran out and prices rose steeply.

日本で最初のウイスキー蒸溜所は1923年、京都の近くに開かれました。洋酒会社の主人と、スコットランドで蒸溜を学んだ若い技師が作ったものです。作り方はスコッチに近い。2000年代から国際的な賞を取り、需要が急に伸びました。ところが1990年代に売り上げが落ち込み、その時期にあまり仕込んでいなかったため、熟成年数の長い瓶は底をつき、値段が大きく上がりました。

Japanese whisky has a clear beginning. In 1918 a young chemist named Masataka Taketsuru went to Scotland, studied at university there, apprenticed at distilleries, and came home with notebooks and a Scottish wife. In 1923 he was hired by Shinjiro Torii, who ran a drinks company, to build Japan's first malt distillery at Yamazaki, between Kyoto and Osaka, chosen for its water.

Taketsuru later left and founded his own company in Hokkaido, because he wanted a colder climate closer to Scotland. So the whole industry descends from two men and one Scottish apprenticeship, which is why the style is closer to Scotch than to bourbon. The part worth explaining is the shortage. Japanese whisky sold badly through the 1990s, so distilleries cut production.

Then from the mid-2000s it started winning the biggest international awards, demand multiplied, and the stock that should have been maturing simply was not there. Distilleries withdrew their age-statement bottles, and prices on the remaining ones went up several times over. Capacity has been expanded since, but whisky takes the time it takes.

日本のウイスキーには、はっきりした始まりがあります。1918年、竹鶴政孝という若い技師がスコットランドへ渡り、大学で学び、蒸溜所で修業し、手帳とスコットランド人の妻を連れて帰りました。1923年、洋酒の会社を営む鳥井信治郎に招かれ、京都と大阪のあいだの山崎に、日本で最初のモルト蒸溜所を建てます。水を理由に選ばれた土地でした。

竹鶴はのちに独立し、北海道に自分の会社を興します。スコットランドに近い、もっと寒い土地を求めたためです。つまりこの産業は、二人の男と一度のスコットランド修業から出ています。作り方がバーボンよりスコッチに近いのは、そのためです。説明する値打ちがあるのは、品薄のほうでしょう。日本のウイスキーは1990年代を通じて売れず、蒸溜所は生産を減らしました。

ところが2000年代の半ばから国際的な大きな賞を取り始め、需要は何倍にもなります。そのとき熟成しているはずだった酒が、そもそも仕込まれていなかった。蒸溜所は年数を表示した銘柄を次々に休売し、残ったものの値段は何倍にもなりました。設備はその後増やされましたが、ウイスキーにかかる時間は縮められません。

Because stock laid down in the 1990s, when sales were poor, was too small for the demand that arrived after 2005. You cannot make an eighteen-year-old whisky quickly.

売れなかった1990年代に仕込んだ量が、2005年以降の需要にまったく足りなかったからです。十八年ものを急いで作ることはできません。

QIs everything labeled Japanese actually made here?

日本と書いてあれば日本で作られているのですか。

Not necessarily in the past. Imported bulk whisky was sometimes bottled and sold as Japanese. An industry standard tightened the definition, with full application from April 2024.

以前は必ずしもそうではありませんでした。輸入した原酒を詰めて日本のものとして売る例がありました。業界の基準が定義を厳しくし、2024年4月から全面的に適用されています。

QHow do people drink it in Japan?

日本ではどう飲みますか。

Very often as a highball — whisky with lots of soda and ice, in a tall glass, with food. It is the standard way in izakaya and is much lighter than drinking it neat.

多くはハイボールです。背の高いグラスに氷と炭酸をたっぷり入れ、食事と一緒に飲みます。居酒屋ではこれが標準で、そのまま飲むよりずっと軽くなります。

豆知識

竹鶴政孝は1918年にスコットランドへ渡り、グラスゴー大学で学び、蒸溜所で実習した。1923年、鳥井信治郎の寿屋(現サントリー)が山崎蒸溜所を建設し、1929年に国産第一号のウイスキーを発売している。竹鶴は1934年に北海道余市で大日本果汁(現ニッカウヰスキー)を創業した。日本洋酒酒造組合は2021年に「ジャパニーズウイスキー」の表示基準を定め、2024年4月から全面適用となった。
