Shochu is distilled, unlike sake, which is brewed. It is usually around 25 percent alcohol and is made from sweet potato, barley, rice, brown sugar or buckwheat, each giving a very different character. People drink it cut with hot water in winter, with cold water or soda in summer, or over ice. It is strongly associated with Kyushu, in the southwest, where distilleries and local styles are concentrated.

Visitors often assume that Japanese alcohol means sake, but in much of the country the everyday drink is shochu. The difference is fundamental: sake is brewed like beer or wine, while shochu is distilled like whisky or vodka. It is usually bottled around twenty-five percent alcohol, which is strong enough that almost nobody drinks it neat.

The standard ways are oyuwari, cut with hot water, which is the winter default and brings out the aroma, and mizuwari with cold water, or with soda over ice. The raw material decides the character. Sweet potato shochu from Kagoshima is earthy and pungent and divides opinion sharply.

Barley shochu from Oita is lighter and easier for a beginner. There are also rice, brown sugar and buckwheat versions. Certain regional types have protected geographical indications. In an izakaya you often buy a bottle, keep it behind the counter with your name on it, and come back to it.

QHow should I order it the first time?

Ask for barley shochu with hot water if it is cold, or with soda if it is not. Say the proportion if you want it weaker, for example six parts water to four parts shochu. If you want to try the famous sweet potato style, order a small glass first, because the aroma is strong.

Background (Japanese)
