The standard explanation
Oden is a pot of assorted ingredients, each simmered until it soaks up the broth: thick rounds of daikon radish, boiled eggs, tofu, konnyaku jelly, and many kinds of fish cake. You pick the pieces you want and pay per piece. It is sold at convenience store counters, street stalls and small bars from autumn through winter. It is cheap, filling and not spicy, and eaten with a dab of mustard.
As a short speech
A full paragraph you can read aloud
Every autumn, a steaming metal tray divided into compartments appears next to the register in Japanese convenience stores. That is oden, and it is one of the most comforting things you can eat here. The idea is simple: a mild broth made from kelp and dried fish, seasoned with soy sauce, in which a dozen different ingredients simmer for hours.
Daikon radish becomes soft and sweet, boiled eggs turn brown, and fish cakes of every shape, from tubes to balls to flat slabs, give up their flavor to the soup. You order by the piece and eat it with hot mustard.
Oden is not a dish with a recipe so much as a category, and it changes by region: darker and richer around Tokyo, pale and delicate in the Kansai area, miso-based in Nagoya, and served with a dried fish powder in Shizuoka. Personally I think the best part is the daikon.
Questions people actually ask
And how to answer them.
QWhat is the gray jelly thing?
Konnyaku, a firm jelly made from the root of a plant called konjac. It has almost no calories and very little taste of its own, but it soaks up the broth and has a chewy bite that Japanese people love. The white noodle-like strands are the same thing in a different shape.
QIs all that fish cake made of real fish?
Yes, the base is minced white fish, ground with starch and salt, then shaped and steamed, boiled or fried. Chikuwa is molded around a stick, hanpen is fluffy and white, and satsuma-age is deep-fried. They are inexpensive everyday foods, not luxury items.
QHow do I order oden at a convenience store?
Tell the staff which pieces you want and how many; there is usually a picture menu on the case. They will put them in a cup with broth and give you mustard on the side. Some stores now pre-pack oden in sealed cups instead, for hygiene.
