Bizen-yaki is pottery made in Bizen City, Okayama. The potters use no glaze at all. Instead, they fire the pieces for a long time in a wood-burning kiln, and the flames and ash create the colors and patterns, so no two pieces look the same. It has been made there without a break since the late 1100s.

Bizen-yaki is a type of pottery from Bizen City in Okayama Prefecture, and what makes it special is something it doesn't have: glaze. Most Japanese pottery is coated with a glassy glaze before it's fired, but Bizen potters leave the clay bare.
They fire the pieces slowly in a wood-burning kiln, often for many days, and everything you see on the surface comes from the fire itself. Ash from the burning wood melts into small specks that look like sesame seeds. Straw wrapped around a piece leaves bright red lines, a pattern called hidasuki.
Because no one can fully control the flames, no two pieces turn out the same. Bizen is one of Japan's Six Ancient Kilns, pottery towns that have kept working since the Middle Ages, and their story was named Japan Heritage in 2017. The pieces can look plain at first, but I find that the longer I look at one, the more I see in it.
Why don't they use glaze?
Bizen potters want the look that only the fire can give. The colors, specks and lines that come out of the kiln are the whole point, so a glaze would cover up what people are looking for.
Do people actually use it every day?
Yes. Cups, plates and flower vases are popular, and plenty of people use them at home. Since there's no glaze, the surface feels rough and quite different from regular dishes.
