Takoyaki are the street food of Osaka. Wheat batter with dashi in it is poured into an iron plate full of round hollows, a piece of boiled octopus and some spring onion and pickled ginger are dropped into each, and the cook turns them with a metal pick until they form spheres.

They come eight or six to a tray, covered in a thick brown sauce, mayonnaise, green seaweed powder and bonito flakes that move in the rising heat. The crucial thing to know is the temperature.

The outside is set but the inside is still almost liquid and holds heat extraordinarily well, so the first one will burn your mouth if you bite it whole. Blow on it, or break it with the pick and wait. Many Japanese households own a takoyaki plate and make them at a party, which turns into a competition over who can turn them properly.

たこ焼きは大阪の屋台の食べ物です。だしを効かせた小麦の生地を、丸いくぼみの並んだ鉄板に流し込み、茹でたたこと葱と紅生姜を落とし、焼き手が金属の錐で返しながら球にしていきます。

六個か八個が舟に載って出てきて、濃い茶色のソース、マヨネーズ、青のり、そして立ちのぼる熱で動く削り節がかかっています。肝心なのは温度です。外は固まっていても中はまだほとんど液体で、しかも驚くほど熱を保つので、一個目を丸ごと噛むと口をやけどします。

息を吹きかけるか、錐で割って待ってください。家に一台たこ焼き器を持っている家庭は多く、集まりで焼くと、うまく返せるかどうかの勝負になります。

口をやけどせずに食べるには、どうすればいいですか。

Do not put a whole one in. Cut or break it with the pick, let the steam out, blow on it, and wait longer than you think you need to. The molten center is the point of the dish and also the hazard.

丸ごと口に入れないことです。錐で割って湯気を逃がし、息を吹きかけ、思っているより長く待ってください。とろりとした中身がこの料理の眼目であり、同時に危険でもあります。

QWhat is moving on top?

上で動いているものは何ですか。

Dried bonito flakes. They are shaved so thin that the heat rising from the ball makes them curl and wave, which startles people the first time. They are not alive and they taste of smoked fish.

削り節です。非常に薄く削ってあるため、玉から立ちのぼる熱で反り返って揺れます。初めて見た人は驚きます。生き物ではなく、燻した魚の味がします。

豆知識

たこ焼きは1935年ごろ、大阪の会津屋が、それ以前からあった「ラヂオ焼き」の具をたこに替えて考案したとされます。家庭用のたこ焼き器は関西の家庭に広く普及しており、集まりの定番になっています。ソースは店ごとに違い、何もかけずに出す店もあります。銀だこのように外を強く焼き上げる流儀もあり、好みが分かれます。明石焼きは見た目が似ていますが、卵を多く使い、だしに浸して食べる別の料理です。
