Donburi means a deep bowl, and by extension a meal served in one: rice with something on top. The common kinds are gyudon with simmered beef, katsudon with a breaded pork cutlet and egg, oyakodon with chicken and egg, tendon with tempura, and kaisendon with raw fish. It is the fastest and cheapest proper meal in Japan.

Donburi is the everyday workhorse of Japanese eating. The word means a deep bowl, and the food is simply rice with a topping cooked to go with it, served in one dish so the sauce soaks down into the rice.

That is the whole idea, and it is why donburi restaurants can serve you in ninety seconds. Gyudon, thin beef simmered with onion in soy sauce and sweet wine, is the cheapest and the most common, and the chains that sell it are open around the clock.

Katsudon, a fried pork cutlet simmered briefly with egg, has a superstition attached: students eat it before an exam, because katsu also sounds like the verb to win. If you want to know how Japanese people actually eat on a weekday, it is not sushi. It is a bowl of rice with something on it, eaten quickly, alone, at a counter.

丼ものは、日本の食事の働き者です。丼という語は深い器を指し、料理としてはご飯の上に、それに合うように調理したものをのせたもの。一つの器で出すので、たれがご飯にしみます。それがすべてで、だから丼の店は90秒で出せます。

From the top down, taking rice and topping together with each mouthful. Stirring the whole bowl is not wrong but it is unusual, and with tempura it ruins the texture.

上から、ご飯と具を一緒に口に運びます。全体を混ぜても間違いではありませんが珍しく、天丼では食感が台無しになります。

QWhat is the red ginger on the counter?

カウンターにある赤い生姜は何ですか。

Beni shoga, ginger pickled in plum vinegar. It is free at beef bowl chains and you take as much as you like, to cut the richness of the meat.

紅生姜です。梅酢に漬けた生姜で、牛丼の店では無料で、好きなだけ取れます。肉の脂を切るためのものです。

QWhy do students eat katsudon before exams?

どうして受験生は試験の前にカツ丼を食べるのですか。

Katsu sounds like the verb meaning to win. It is a pun, and everyone knows it is a pun, which does not stop families from doing it the night before.

「カツ」が「勝つ」と同じ音だからです。ただの語呂合わせで、皆それを承知していますが、それでも前の晩に食べる家は多いです。

豆知識

丼ものは江戸時代の「けんどん振り切り」の器に由来するとされ、一杯で出す手早い食事として広まった。うなぎの蒲焼きをご飯にのせた鰻丼が早い例で、天丼、親子丼、カツ丼と続いた。親子丼の名は、鶏と卵という親子の取り合わせから来ている。鮭とイクラをのせた丼も同じ理屈で「親子丼」と呼ばれることがある。牛丼の大手チェーンは明治時代に始まった店を起源に持ち、いまは24時間営業と数百円という価格で、日本の外食のもっとも安い側を支えている。
