It is the heart of Japanese manufacturing — Toyota is based in the prefecture — and it has a distinct local cuisine built around a dark, strong soybean miso: miso katsu, miso nikomi udon, and eel served three ways. Coffee shops here serve a free breakfast with your morning coffee.

Nagoya has a reputation among Japanese people as the city everyone passes through, which is unfair but useful to know. It sits between Tokyo and Osaka on the shinkansen, and it is the center of Japanese manufacturing — Toyota's headquarters are in the prefecture, and the surrounding area builds cars, machine tools and aircraft parts.

What makes it interesting for a visitor is that its food is genuinely a separate tradition. The region uses hatcho miso, a dark soybean miso fermented for a long time, which is much stronger than the miso used elsewhere, and it goes into everything: tonkatsu with miso sauce, udon simmered in miso in a clay pot, even a miso oden.

There is also hitsumabushi, grilled eel over rice that you eat in three stages, the last with broth poured over. And there is the morning service, a custom in local coffee shops of giving you toast and an egg free with your morning coffee, which started as competition between cafes and never stopped.

名古屋には、日本人のあいだで「通り過ぎられる町」という評判があります。不当な話ですが、知っておくと役に立ちます。新幹線で東京と大阪のあいだにあり、日本の製造業の中心です。トヨタの本社はこの県にあり、周辺では自動車、工作機械、航空機の部品が作られています。

For the food, yes, and the castle and the Toyota industry museum are both substantial. It is not a scenic city, and locals will tell you so themselves.

食べ物のためなら、あります。名古屋城とトヨタの産業技術記念館も見ごたえがあります。景色の町ではありませんし、地元の人自身がそう言います。

QWhat is hatcho miso?

八丁味噌とは何ですか。

A miso made only from soybeans and salt, with no rice or barley, aged for a year or more. It is dark, thick and much less sweet than common miso.

大豆と塩だけで作る味噌で、米も麦も使わず、一年以上熟成させます。色が濃く、とろりとしていて、一般的な味噌よりずっと甘みが少ないです。

モーニングとは何ですか。

Order a coffee at a local cafe before about eleven and you get toast and a boiled egg at no extra charge. It is a regional custom, not a nationwide one.

十一時ごろまでに喫茶店で珈琲を頼むと、トーストとゆで卵が追加の料金なしで付いてきます。全国の習慣ではなく、この地方のものです。

FACTIt varies sharply by region. The Nagoya area's soybean miso is dark and sharp, while much of western Japan uses a pale, sweet one.

豆知識

名古屋市の人口はおよそ230万人で、横浜・大阪に次ぐ規模。名古屋城は1610年に徳川家康の命で築かれ、天守は1945年の空襲で焼失し、1959年に鉄筋で再建された。木造での再建が検討されている。八丁味噌の名は、岡崎城から八丁(約870メートル)離れた八丁村で作られたことに由来するとされる。喫茶店のモーニングは、豊橋や一宮が発祥として語られることが多いが、諸説ある。
