Every Japanese town has a dish it tells visitors to eat. Some are genuinely old regional cooking; many are postwar local inventions, or ordinary dishes that a town organized itself around promoting. Competitions since the 2000s pushed the phenomenon hard, and a successful one can noticeably change a town's visitor numbers. It is worth knowing the difference between this and kyodo ryori, traditional regional cuisine.

日本のどの町にも、来た人に食べろと勧める一品があります。本当に古い郷土の料理もあれば、戦後に生まれたものや、ありふれた料理を町が旗印にしたものも多い。2000年代以降の大会がこの動きを強く押し、成功すれば町を訪れる人の数がはっきり変わります。昔からの郷土料理との違いを知っておくとよいでしょう。

Travel in Japan and you will constantly be told a town has a food you must try. Japanese has two different words here. Kyodo ryori is traditional regional cooking, handed down in households, usually built on what the area grew or caught. Gotochi gourmet is newer: a dish a town has decided to be known for, promoted deliberately, with a logo, an association of local restaurants that agree on its rules, and a stand at food events.

Many are genuinely local and old; plenty are not. A fried noodle dish, a ramen with a particular broth, a rice bowl with a local sauce — these can date from the postwar decades or later, and the town organized around them because tourism needed a reason to stop there.

The competitions that ran from the mid-2000s made this a serious business, and a town that won one could see a measurable jump in visitors. None of that makes the food worse. It just means that when someone says a dish is traditional here, it is worth gently asking how old it is.

日本を旅すると、この町にはぜひ食べるべきものがある、と繰り返し言われます。それが実際どういう意味かを知っておくと役に立ちます。日本語にはここで二つの言葉があります。郷土料理は、家々に受け継がれてきた土地の料理で、その土地で採れるもの、獲れるものの上に立っています。ご当地グルメはもっと新しい考え方です。町が、これで知られようと決めた料理。

意識して売り出し、しるしを作り、地元の店が集まって決まりを取り決め、催しに出店します。本当に古く土地のものも多いのですが、そうでないものも少なくありません。焼きそば、特徴のある汁のラーメン、地元のたれをかけた丼。こうしたものは戦後やそれ以降に生まれていることがあり、町がそこに集まったのは、旅行者に立ち寄る理由が要ったからです。

2000年代半ばからの大会がこれを本気の商売にし、優勝した町では訪れる人が目に見えて増えました。だからといって料理の値打ちが下がるわけではありません。ただ、この料理は昔からのものだと言われたら、いつからのものかを、やんわり尋ねてみる値打ちはあります。

Partly, and the towns say so openly. But the dishes are usually cooked by the local shops that promote them, and the money stays in the area, which is the point of the exercise.

その面はありますし、町も隠しません。ただ、作るのは売り出している地元の店であり、お金がその土地に残ることが目的です。

QHow do I find the real traditional food?

本当の郷土料理はどう探せばよいですか。

Ask for kyodo ryori by name, look at inn breakfasts, and visit local markets and roadside stations. Those show what the area actually grows and eats.

郷土料理という言葉で尋ねること、宿の朝食を見ること、市場や道の駅に行くことです。その土地が実際に作り、食べているものが分かります。

QAre these dishes expensive?

値段は高いのですか。

Usually the opposite. Most are cheap everyday food — noodles, rice bowls, grilled skewers — which is part of why towns chose them.

むしろ逆です。麺、丼、串焼きといった安い日常の食べ物が多く、町がそれを選んだ理由の一つでもあります。

誤解されやすい

豆知識

ご当地グルメを競う大会は2006年に始まり、各地の団体が出展して来場者の投票で順位を決める形が広まった。富士宮やきそばや横手やきそばのように、大会をきっかけに全国に知られた例がある。「郷土料理」は農林水産省が各地の料理を選定して紹介しており、家庭や地域に伝わる料理を指す語として使い分けられる。道の駅は1993年に制度として始まり、地場の農産物や加工品を売る場になっている。
