Ichigo ichie is four characters meaning, roughly, one lifetime, one meeting. It comes from the tea ceremony. A tea gathering has a host, a few guests, a scroll chosen for that day, flowers cut that morning, and a particular quality of light.
Even if exactly the same people meet in the same room next month, it will not be the same gathering, so the host is expected to prepare as though this were the only one. The phrase is usually credited to Ii Naosuke, who wrote it down in the nineteenth century, drawing on the teaching of Sen no Rikyu.
It has since escaped the tea room completely. You hear it in graduation speeches, at farewell parties, in sports, and from shop owners talking about customers. What I find useful about it is that it is not sentimental. It is an instruction: this will not come back, so pay attention now.
一期一会は四つの文字で、おおよそ「一生に一度の出会い」を意味します。出どころは茶の湯です。茶事には亭主がいて、数人の客がいて、その日のために選んだ掛け軸があり、その朝に切った花があり、その時刻の光があります。
来月まったく同じ人が同じ部屋に集まっても、それは同じ茶事ではありません。だから亭主は、これが唯一の一度であるかのように支度をすることが求められます。この言葉は、千利休の教えをもとに19世紀の井伊直弼が書き記したものとされます。

Mostly, but not only. It is applied to a performance, a view, a meal, any occasion that cannot be repeated exactly. The core idea is the unrepeatability, not the people.

The phrase in its current form is credited to Ii Naosuke in his writing on tea, which draws on a line recorded from Sen no Rikyu's teaching by his disciple. The idea is older than the fixed wording.
現在の形は、茶について記した井伊直弼によるとされ、それは千利休の教えを弟子が書き留めた一節をもとにしています。言葉が固まる前から、考え方はありました。
QHow do I use it in English?
英語ではどう使えばいいですか。
You generally explain it rather than translate it. "This particular moment will never come again, so treat it that way" carries the sense. Some English writers now use the phrase directly.
訳すより説明するほうが通じます。「この瞬間は二度と来ないのだから、そのように扱う」で意味は伝わります。英語でそのまま ichigo ichie と使う書き手も出てきました。

「一期」は仏教語で人の一生を指し、「一会」は一度の会合。千利休の弟子・山上宗二が『山上宗二記』に記した「一期に一度の会」が原型とされ、四字の形として広めたのは幕末の大老・井伊直弼の茶書『茶湯一会集』である。井伊直弼は茶人としても知られ、桜田門外の変で暗殺された人物でもある。現代では卒業式や送別のスピーチの定番であり、スポーツ選手や飲食店の姿勢を語る言葉としても使われる。英語圏でも ichigo ichie を書名に用いた本が出版され、そのまま借用語として紹介されることが増えている。
