In a Japanese noodle shop, people make noise. Pulling ramen or soba in with air is ordinary and nobody looks up. There are two practical reasons: it cools very hot noodles on the way to your mouth, and with soba it is said to carry the aroma. You do not have to do it. But you also do not need to eat silently, which is the part most visitors get wrong in the other direction.
日本の麺の店では、みんな音を立てます。ラーメンやそばを空気と一緒に吸い込むのは当たり前で、誰も顔を上げません。実用的な理由が二つあり、熱い麺を口に入るまでに冷ますこと、そばでは香りが立つと言われることです。まねをする必要はありません。ただ、無理に静かに食べる必要もありません。多くの方はそちらの方向で間違えます。

Almost every visitor to Japan has heard that you are supposed to slurp your noodles. That is close to the truth but slightly off. Slurping is not a rule of etiquette and nobody will think less of you for eating quietly. What is true is that the noise carries no stigma at all.
In a ramen shop at lunchtime the sound is constant, and Japanese people simply do not register it. The practical logic is that noodles come out extremely hot, and drawing air in with them cools them enough to eat immediately; with soba, people say it brings out the aroma the way swirling wine does.
The important thing for a visitor is the reverse direction. If you try very hard to eat silently, you will eat slowly, the noodles will go soft, and you will have a worse bowl. Also worth knowing: this tolerance is specific to noodles and soup. Chewing with your mouth open at any other time is as rude in Japan as anywhere else.
日本に来る方のほとんどが、麺はすするものだと聞いています。近いのですが、少しずれています。すすることは作法の決まりではありませんし、静かに食べたからといって悪く思われることもありません。本当なのは、音にまったく抵抗がない、ということです。
昼のラーメン屋では音が途切れませんが、日本人はそれを意識すらしていません。実用的には、麺がとても熱いので、空気と一緒に吸い込むとすぐ食べられるくらいに冷める、ということです。そばでは、ワインを回すのと同じように香りが立つと言われます。
旅行で来る方に大事なのは、逆の方向です。無理に音を立てずに食べようとすると、時間がかかり、麺がのびて、まずい一杯になります。もうひとつ。この寛容さは麺と汁物に限った話です。それ以外の場面で口を開けて噛むのは、日本でもよそと同じように失礼です。

Not at all. Ramen soup is very salty and plenty of Japanese people leave most of it. Finishing it is a compliment, not an obligation.
まったく問題ありません。ラーメンの汁は塩気が強く、日本人でも残す人はたくさんいます。飲み干すのは褒め言葉であって、義務ではありません。
QWhat about at a nice restaurant?
高級な店ではどうですか。
The same applies to noodles anywhere, including high-end soba shops, where slurping is if anything more expected. In a formal kaiseki meal there usually are not noodles to slurp in the first place.
麺であればどこでも同じで、格の高いそば屋ではむしろすするものとされています。懐石のような席では、そもそもすする麺がほとんど出ません。
誤解されやすい

麺をすする音への寛容さは、日本語の会話でも「音を立てて食べてよい数少ないもの」として語られる。ただし歴史的にそうだったという明確な資料があるわけではなく、そばの食べ方として語られるようになった時期にも諸説ある。近年は、外国人客の増加を背景に、すする音を不快に感じる人がいることを指して「ヌードルハラスメント」という言葉が話題になったが、これは造語であり、日本で広く共有された概念ではない。なお、汁物を器に口をつけて飲むことも日本では普通で、スプーンを使わない点は外国の方が戸惑いやすい。
