培養サーモンがアメリカで食べられるように　魚の細胞から育てた「海でとれない魚」

The United States has cleared salmon grown from fish cells as safe to eat. The salmon is grown in large tanks, not in the sea. It is the first seafood of this kind to get the green light in the country.

アメリカで、魚の細胞から育てたサーモンが、食べても安全だと認められました。このサーモンは海ではなく、大きなタンクの中で育てられます。この種類の魚介類が国に認められたのは、これが初めてです。

A company called Wildtype makes the salmon in San Francisco. Scientists take cells from young salmon. They grow the cells in tanks called bioreactors. Then they mix the cells with plant-based foods to make something like a fish fillet.

サンフランシスコのワイルドタイプという会社が、このサーモンを作っています。科学者たちは、若いサケから細胞をとります。その細胞を、バイオリアクターと呼ばれるタンクで育てます。それから細胞を植物由来の材料とまぜて、魚の切り身のようなものを作ります。

In May 2025, a U.S. government agency agreed that the fish is as safe as farmed salmon. A restaurant in Portland, Oregon, started serving it. The company plans to sell it to four more restaurants.

2025年5月、アメリカの政府機関が、この魚は養殖のサケと同じくらい安全だと認めました。オレゴン州ポートランドのレストランが、このサーモンを出しはじめました。会社は、さらに4つのレストランでも出してもらう予定です。

The salmon is not sold in stores yet. Some U.S. states, such as Florida, have banned meat grown from cells.

The U.S. Food and Drug Administration (FDA) has cleared salmon grown from fish cells for people to eat, the first time it has done so for any seafood. The agency sent a letter dated May 28, 2025, to Wildtype, a start-up based in San Francisco. In the letter, the FDA said it had no questions about the company's conclusion that its cultivated coho salmon is as safe as farmed salmon. The decision means restaurants in the United States can start selling the fish right away.

Wildtype starts with cells taken from young coho salmon raised at a hatchery in Washington state. The cells are grown in large tanks called bioreactors. They are then harvested as a paste. The paste is mixed with plant-based ingredients to create something that looks like a regular fillet.

ワイルドタイプは、ワシントン州のふ化場で育った若いギンザケからとった細胞を使います。細胞は、バイオリアクターと呼ばれる大きなタンクで育てられます。それをペースト状にして取り出します。そのペーストを植物由来の材料とまぜて、ふつうの切り身のような見た目に仕上げます。

Before Wildtype, two companies making chicken from cells, Upside Foods and Good Meat, had won full U.S. approval. The salmon first went on the menu at Kann, a restaurant in Portland, Oregon. Wildtype plans to expand to four more restaurants in the coming months, but it has not announced plans to sell the fish in stores.

ワイルドタイプより前には、細胞から鶏肉を作るアップサイド・フーズとグッド・ミートの2社が、アメリカで販売の承認をすべて得ていました。このサーモンは、まずオレゴン州ポートランドのレストラン「カン」のメニューに登場しました。ワイルドタイプは数か月のうちにさらに4つのレストランへ広げる予定ですが、お店で売る計画はまだ発表していません。

Cultivated meat still faces opposition in the United States. Florida and Alabama banned its sale in 2024, and Indiana, Mississippi and Nebraska passed similar limits in 2025. The FDA also asked Wildtype to keep working with the agency on how the product should be labeled.

培養肉には、アメリカでいまも反対の声があります。フロリダ州とアラバマ州は2024年に培養肉の販売を禁止し、2025年にはインディアナ州、ミシシッピ州、ネブラスカ州も同じような制限を決めました。またFDAは、商品の表示のしかたについて、引き続き話し合うようワイルドタイプに求めました。
