1More specialty shops selling malatang opened in Japan in the first six months of this year than in all of last year, a data company said in September. Malatang is a spicy soup that comes from the Sichuan region of China. At specialty shops, customers pick their own ingredients, such as glass noodles and vegetables, and the staff cook them in the broth.

2The data company Review counted new shops using public records from local governments. It found that 273 malatang specialty shops opened from January to June, compared with 225 in the whole of 2025. More than 40 shops opened every month from February to June. In 2022, the number for the full year was only 21.

3The rise stands out because the number of new Chinese restaurants overall is falling. New Chinese restaurants dropped from 1,361 in 2022 to 1,059 in 2025, while malatang's share of them grew from 1.5 percent to 21.2 percent.

4The boom has also spread beyond big cities. Of the 273 shops that opened this year, 165, or about 60 percent, are outside the greater Tokyo area.

5A food business consultant wrote in June that the soup is especially popular with young women. He said the fun of choosing ingredients is a key reason for its success. Malatang also appeared among 50 nominees for a buzzword award based on a survey of about 1,000 junior high and high school girls. The cooking website Foodist Service also named it the top food word of the first half of 2026.

1マーラータンを出す専門店が、今年の最初の半年で、去年1年間よりも多くオープンしたと、データ会社が9月に発表しました。マーラータンは、中国の四川地方で生まれた辛いスープ料理です。専門店では、お客さんが春雨や野菜などの具を自分で選び、店の人がそれをスープで煮ます。
