For Japan the war did not begin in 1941. Fighting in China had been going on since 1937, and Japanese forces had been in Manchuria since 1931. What happened in December 1941 was that Japan attacked the United States and the British Empire as well, which turned a regional war into part of a global one. The fighting ended in August 1945.
In Japan the date remembered is the 15th of August, when a recording of the emperor announcing the acceptance of surrender terms was broadcast, and that day is marked each year with a national ceremony. The formal surrender document was signed on the 2nd of September, which is the date used in many other countries.
Even the name is unsettled here: Pacific War is the most common term, Greater East Asia War was the wartime name and is now associated with particular political positions, and Asia-Pacific War is used by historians who want to include the fighting in China.

Because the 15th is when the public heard the emperor's broadcast accepting the surrender terms, which is the moment the war ended in people's experience. The signing on the 2nd of September was a formal procedure aboard a ship.
