The standard explanation

Hocho is the Japanese word for a kitchen knife. Traditional Japanese knives are often sharpened on one side only, which lets a cook make very thin, clean cuts, especially for raw fish. Each knife has a job: one for cutting fish, one for slicing sashimi, one for vegetables. Towns such as Sakai in Osaka and Seki in Gifu are famous for making them.

A full paragraph you can read aloud

Japanese kitchen knives, or hocho, have become a popular thing for visitors to take home. What makes traditional ones different is the edge. Many are sharpened on one side only, like a chisel, so a cook can cut raw fish in a single, clean stroke without crushing it.

Professional cooks use different knives for different jobs: a heavy deba for cutting up fish, a long yanagiba for sashimi, and a thin usuba for vegetables. At home, many people use a santoku, an all-purpose knife sharpened on both sides.

Sakai in Osaka has made knives since the 1500s, and much of the work is still split between specialists who forge, sharpen and fit the handle. One tip: many of these knives are carbon steel, so you need to dry them right after washing, or they will rust.

Questions people actually ask

And how to answer them.

Q

Why are some Japanese knives sharp on only one side?

A single-sided edge can be made extremely thin, so it slices raw fish cleanly and keeps its texture. The flat back also helps the slice fall away from the blade. The downside is that it takes practice to cut straight, and left-handed cooks need a special version.

Q

Can I carry a knife I bought in Japan?

Japanese law bans carrying a blade longer than 6 centimeters without a good reason. Taking a new knife straight back to your hotel in its box is fine, but don't take it sightseeing. On a plane, it has to go in your checked bag.

Q

Which knife should a beginner buy?

A santoku or a gyuto, which are both sharpened on both sides, is the easiest to start with. Stainless steel is easier to care for than carbon steel. Single-sided knives are better left until you know you need one.
