Kusatsu is a good hot spring to explain because its most famous custom exists to solve a practical problem. The water here is strongly acidic, around pH 2, acidic enough that it is said to kill most bacteria, and it emerges very hot and in one of the largest natural volumes in Japan.
You cannot simply add cold water, because that dilutes the minerals people came for. So the old solution was to cool it mechanically: long wooden boards, about a meter and a half, worked through the water by a row of people until the temperature drops. That is yumomi, and because it is repetitive work, it was done to a song.
It is now performed several times a day as a show, and visitors can try it. In the middle of town is the yubatake, literally the hot water field, a set of open wooden channels where the spring water runs and cools, throwing up steam and depositing yellow mineral crystals.
