Where Locals Eat

Maria(Philippines)Darren(Singapore)

Maria
Darren, I'm finally visiting Singapore next month. Where should I eat?
Darren
Hawker centres, definitely. Some of the best food in the country is sold at simple stalls, not fancy restaurants. Our hawker culture is even on UNESCO's list now.
Maria
I've heard that! Is there anything I should know before I go?
Darren
One thing: if you see a packet of tissues on a table, don't sit there. It means someone has choped the seat.
Maria
Choped?
Darren
It's Singlish for reserving something. People leave tissues or an umbrella on a table, then go and queue for their food.
Maria
That's so clever. Doesn't anyone ever take the tissues?
Darren
Hardly ever. It's an unwritten rule, and everyone just respects it.
Maria
In the Philippines, we have something a bit like hawker stalls — carinderias. They're small, family-run eateries. The dishes are already cooked and on display, so you just point at what you want.
Darren
Oh, like economy rice here. What would you recommend?
Maria
Adobo, obviously. And sinigang — it's a sour soup, usually made with tamarind. Some people find it too sour at first, but I grew up on it.
Darren
A sour soup sounds great. Singaporeans love strong flavours.
Maria
Then you'd fit right in. Next time you come to Manila, I'll take you to my favourite carinderia near my old university.
Darren
Deal. And I'll teach you how to chope a seat properly.
