The standard explanation
Onsen bunsekisho is the official water analysis you'll see on the wall at many hot springs, often near the changing room. Under Japan's Hot Springs Act, places that let the public bathe in hot spring water have to post what's in the water, who shouldn't bathe in it, and how to bathe safely. Since 2005, they also have to say if they add water, heat it, recirculate it or disinfect it.
As a short speech
A full paragraph you can read aloud
When you visit an onsen in Japan, take a moment to look at the wall near the changing room. You'll often find a framed chart full of numbers and chemical names. That's the onsen bunsekisho, the official analysis of the hot spring water.
Under Japan's Hot Springs Act, any place that lets the public bathe in hot spring water has to post this information: what minerals are in the water, which health conditions mean you shouldn't bathe in it, and tips for bathing safely. The chart also shows the water's temperature at the source and its type, such as sulfur or salt springs.
Since 2005, places also have to tell you if they add tap water, heat the water, reuse it by filtering it, or add disinfectant like chlorine. So if you care about getting water straight from the source, this chart is where you check. It's not the most exciting thing to read, but I think it's a nice example of how seriously Japan treats its hot springs.
Questions people actually ask
And how to answer them.
What does "kinkisho" on the chart mean?
It's a list of health conditions for which bathing in that spring isn't recommended, such as some serious heart problems. If you have a health concern, it's worth asking the staff or your doctor before you get in.
How can I tell if the water is straight from the source?
Look for the notes about adding water, heating, recirculating and disinfecting. If none of them apply, the bath is likely gensen kakenagashi, with fresh hot spring water constantly flowing in. Many places also put up a separate sign saying so.
Does a hot spring have to be hot?
Not under Japanese law. Water from the ground counts as a hot spring if it's at least 25 degrees Celsius, or if it contains enough of certain listed minerals, even if it's cold. That's why some onsen heat their water.
