The standard explanation

Nambu tekki is cast ironware made in Iwate Prefecture, in Morioka and Oshu. Its most famous product is the tetsubin, a heavy kettle for boiling water, with a pebbled surface made by pressing the sand mold. Iron kettles are said to make water taste rounder, and boiling in one adds a small amount of iron to the water.

As a short speech

A full paragraph you can read aloud

Nambu tekki is cast ironware from Iwate Prefecture in northern Japan, and the craft goes back several centuries to the tea culture of the local lords. The classic object is the tetsubin, an iron kettle you put directly on a flame to boil water.

It is heavy, it holds heat, and the dimpled surface comes from pressing a pattern into the sand mold before casting. People say water boiled in one tastes rounder and sweeter. Part of that is real chemistry, because a small amount of iron does dissolve into the water, and part of it is probably the slow steady boil.

There is a practical point to know. A tetsubin for boiling water is bare iron inside and must be dried thoroughly after every use or it rusts. A teapot for brewing tea is usually enamelled inside and is a different object, even though it looks similar.

Questions people actually ask

And how to answer them.

QCan I brew tea directly in a tetsubin?

Not in a bare iron one. Tea tannins react with the iron surface and both the kettle and the tea suffer. Use the tetsubin to boil water, and brew in a separate pot, or buy an enamelled iron teapot which is made for brewing.

QHow do I stop it rusting?

Empty it while it is still hot so the residual heat dries the inside, leave the lid off, and never scrub the interior or store water in it overnight. A little surface rust is not dangerous and can be boiled out with tea leaves.

Phrases you can use
