A Japanese kitchen tells you what Japanese cooking actually requires. The stove usually has two or three gas burners and, underneath, a narrow drawer-shaped grill designed for fish, which is used several times a week. A built-in oven is rare in an ordinary home, and where baking happens it is usually done in a combination microwave.

The sink is small, counter space is short, and the fridge is narrower than a Western one. None of this is a shortage in local terms, because a standard meal is rice from a rice cooker, a soup, a grilled or simmered dish and a pickle, and almost all of that is done on two burners.

Appliances take over specific jobs: an electric rice cooker that keeps rice warm all day, an electric kettle, sometimes a small toaster oven for bread. If you come from a country where baking is normal, the absence of an oven is the biggest adjustment, and a table-top oven is what most people buy.
