Why Popcorn Pops

You put hard, yellow corn into a hot pot. A minute later, it explodes into soft, white popcorn. This little kitchen magic is full of science. People have enjoyed popcorn for thousands of years. So what makes a corn kernel pop?

The secret is water. Inside every popcorn kernel is a tiny drop of water. Around this water is a hard, smooth shell. This shell is special: it does not let water or steam escape easily.

When you heat the kernel, the water inside gets hotter and hotter. Soon it turns into steam. The steam needs more space, so it pushes harder and harder against the hard shell.

The pressure keeps building until the shell cannot hold it. Suddenly, the kernel bursts open with a loud "pop." The soft white inside turns inside out, and a piece of popcorn is born. The whole kernel flips inside out in an instant.

Not all corn can do this. Only one special type has a shell strong enough to trap the steam. Other kinds of corn just burn or dry out, because their steam leaks away too soon.

So popcorn is really a tiny steam explosion on your plate. The next time you eat a warm, fluffy piece, remember the drop of water that made it jump. It is science you can eat.

へえ!

ポップコーンが弾けるには殻の中の水分が約14%必要、と分かっています。少なすぎても多すぎても弾けないのです。水が水蒸気になると体積が約1700倍にもなる——これが「爆発」の正体。英検2級では身近な現象を科学で説明する長文、準1級ではその科学が食品産業や環境とどう結びつくかを論じる長文が出ます。台所は実は科学の実験室なんですね^^

ポップコーンがはじけるのに必要な温度は約180℃、内部の圧力は大気圧の約9倍に達します。理想的な水分量は13.5〜14%——多すぎても少なすぎても、うまく膨らみません。だから乾燥した部屋に置きっぱなしにした豆は、はじけずに焦げます(「オールドメイド」と呼ばれる不発弾)。そして最古のポップコーンは、ペルーの遺跡から出土した約6,700年前のもの。人類は、映画館ができる6,000年以上前から、これを食べていたわけです^^
