Today, chocolate is sweet and creamy. We enjoy it in bars, cakes, and ice cream. But for most of its long history, chocolate was not sweet at all. It was a bitter drink.

Chocolate comes from the seeds of the cacao tree. These seeds are called cacao beans. People in Central America were using them more than 3,000 years ago. The Maya and the Aztec peoples loved a special drink made from them.

Their chocolate was very different from ours. They ground the beans and mixed them with water and spices. The drink was dark, bitter, and sometimes hot with chili. They did not add any sugar. In fact, the word "chocolate" may come from a word that means "bitter water."

The Aztec people valued cacao beans so much that they used them as money. You could buy food or even pay workers with a handful of beans. Some people kept the beans like treasure.

When chocolate reached Europe in the 1500s, people there added sugar and milk. Slowly, the bitter drink became the sweet treat we know today. In 1828, a Dutch maker found a way to make smooth chocolate powder.

へえ!

「チョコをなめらかな固形にする」技術は19世紀の大発明でした。1828年のcocoa press(カカオ圧搾機)で油分を分離し、のちに板チョコが誕生します。「ある食品が世界に広まる過程」は、英検2級の説明文の型そのもの。準1級では、そこに貿易や植民地の話が重なって評論文になります。同じ話が、級によって表情を変えるわけです。bitter→sweetへの変化のように、原産地と消費地で姿を変える食べ物は、出題者が大好きなテーマなんです^^

もう一つ

アステカではカカオ豆100粒で奴隷1人、4粒でカボチャ1個といった相場が記録に残っています。そして通貨である以上、当然「偽札」も現れました——粘土で作った偽豆に殻をかぶせたものが見つかっているのです。世界最古級の偽造事件がチョコレートで起きていたわけですね。ちなみに1828年にオランダのヴァン・ハウテンが発明した装置は、カカオから脂肪を絞り出すもの。この「油を抜く技術」があって初めて、固形の板チョコが生まれました^^
