When most people hear the word "sushi," they imagine fresh raw fish on a small ball of rice. But the sushi we eat today is actually very different from the original. The earliest form of sushi did not even use fresh fish at all. It used fish that had been left to ferment for many months — sometimes even for years.

The story begins more than 1,000 years ago in Southeast Asia. To keep fish from going bad in hot weather, people learned a clever trick. They put cleaned fish inside cooked rice and left it for a long time. The rice slowly turned sour, like yogurt, and protected the fish from harmful bacteria. When people were finally ready to eat, they threw away the rice and ate only the fish.

This idea traveled to Japan. By the 8th century, Japanese people were making a similar dish called narezushi, or "matured sushi." It was very strong-smelling and tasted very sour, but it kept fish safe through long winters. Some special restaurants in Japan still serve narezushi today, and it has many quiet fans.

The big change came in the early 1800s in Tokyo, then called Edo. A clever cook named Hanaya Yohei made small balls of vinegared rice and topped them with very fresh fish, ready to eat in seconds. This was the birth of "Edomae sushi," the style most of us know today.

So when you enjoy a piece of sushi, you are tasting a thousand years of human creativity on one small bite.

へえ!

なれずしの代表は滋賀県の「鮒寿司(ふなずし)」。琵琶湖のニゴロブナを塩漬けにしてからご飯に漬け込み、1〜3年かけて発酵させる伝統食品で、独特の強い香りが特徴です。中華料理の「酢豚」や東南アジアの魚醤(ナンプラー・ヌクマム)、そして寿司は、すべて「発酵で魚を保存する」同じ系統の食文化から枝分かれしました。江戸前寿司の誕生は、冷蔵技術がない時代に「ファストフード化」を実現した革命で、当時の江戸では屋台で立ち食いするのが普通でした(現代の握りはむしろ高級料理ですよね)。寿司は 2013年に「和食」がUNESCO無形文化遺産 に登録されたときの代表料理。日本の食文化が世界に誇れる、最高の話題のひとつです^^

なれずしの子孫は今も現役です。滋賀県の鮒ずしは、ニゴロブナを塩漬けにしたあと1〜3年も飯に漬け込みます。匂いは強烈ですが、乳酸菌の塊で、昔から胃腸薬がわりに食べられてきました。そして江戸前寿司のもう一つの真実——当時の握りはおにぎりほどの大きさで、屋台で立ち食いするファストフードでした。今の高級店の姿は、たかだかこの数十年のもの。「高級料理」は、たいてい元は庶民の知恵です(Day 009 のピザと同じ道すじですね)^^
