Pizza Was Once Food for the Poor

Today, pizza is one of the most loved foods in the world. From Tokyo to New York, almost every city has its own favorite pizza shop. But 200 years ago, no rich person would even touch a pizza.

Pizza was born in Naples, a busy port city in southern Italy. In the 1700s, Naples was crowded and poor. Working people needed cheap food they could eat quickly with one hand. Flat bread with tomato on top was perfect. They could buy it on the street, eat it while walking, and pay only a few coins.

For a long time, rich Italians thought pizza was dirty street food. Some doctors even said it was "bad for the stomach." Pizza stayed in poor neighborhoods, almost invisible to the upper class.

The big change came in 1889. Queen Margherita of Italy was visiting Naples and felt curious about the famous local food. A pizza maker named Raffaele Esposito created a special pizza for her. He used three ingredients in the colors of the Italian flag: red tomato, white mozzarella cheese, and green basil.

The queen loved it. She wrote him a thank-you letter, and soon everyone in Italy wanted to try the "Queen's pizza." That is why we still call it Margherita today.

After World War II, Italian immigrants brought pizza to America, and then to the rest of the world. From poor street food to global star — what a journey for a piece of bread.

へえ!

マルゲリータ・ピザに使われる赤・白・緑はイタリア国旗の色 (il Tricolore) と同じ。職人エスポジトの「国家への愛と王妃への敬意」を一皿に込めたデザインです。ちなみに本場ナポリでは Vera Pizza Napoletana 協会がピザの作り方を厳格に定義(生地は手で伸ばす、薪窯で60〜90秒以内、など)。料理が UNESCO 無形文化遺産に登録されたのは2017年。「貧者の食」が国を代表する文化財になった瞬間です。食文化は英検2級の説明文の定番テーマ。準1級になると「貧しい人の食が世界の定番になった過程」のように、社会の変化として論じる形で出てきます。同じピザでも、聞かれ方が変わります。「料理 = 階級と歴史の縮図」の論点はライティングで強い武器^^

ナポリのピッツァ職人の技(Pizzaiuolo)は、2017年にユネスコ無形文化遺産に登録されました。生地を回す手さばきも、薪窯の前での立ち居振る舞いも、丸ごと「人類が守るべき文化」という扱いです。しかも本物のナポリピッツァには規格があり、直径35cm以下・縁の厚さ1〜2cm・薪窯で485℃・焼き時間60〜90秒。世界一おおらかそうな料理が、実は世界一こまかい規格を持っている——このギャップがたまりません^^
