Why Onions Make Us Cry

Cutting an onion looks simple, but it often ends with tears running down our face. Even strong chefs cannot fully stop these tears. Why does this small vegetable have such a powerful effect on our eyes?

目から鱗の豆知識

へえ!

玉ねぎが目に染みる原因の気体は、正式名称 syn-propanethial-S-oxide(シン-プロパンチアール-S-オキシド)。長い名前ですが、これが涙の犯人。日本では2002年に ハウス食品中央研究所 がこの化学反応の仕組みを世界で初めて解明し、米科学誌 Nature に掲載されました。それを応用して2013年には「涙の出ない玉ねぎ」が品種改良で誕生(まだ商業流通は限定的)。ちなみに、玉ねぎの近縁種であるニンニクには涙を誘う物質がほとんど含まれないので、目に染みません。料理の科学は、英検2級の身近な説明文にぴったりの題材。準1級では同じ化学反応が、食品科学や健康の議論につながって出てきます。台所は知的トリビアの宝庫です^^

もう一つ

2008年、日本のハウス食品の研究チームが「涙の出ない玉ねぎ」の作り方を発表し、その研究はイグ・ノーベル賞(化学賞)を受賞しました。涙の原因となる酵素の働きを抑えた品種で、2015年には「スマイルボール」として実際に商品化されています。しかも生でも辛くないので、そのままサラダで食べられる。ちなみに「切ると涙が出る」性質は玉ねぎ側の防御装置ですから、これを取り除くのは「武装解除した玉ねぎ」を作ったのと同じことなんですね^^
