Most people think ketchup is an American food. We put it on hamburgers, French fries, and hot dogs. But the story of ketchup is much older and stranger than you might guess.
The word "ketchup" probably comes from a Chinese word, "kê-tsiap." About 300 years ago, this was a salty sauce made from fish in southern China. It looked nothing like the red ketchup we know today. There were no tomatoes in it at all!
British sailors tasted this fish sauce in Asia and loved it. They tried to make it back home, but they could not find the same ingredients. So they used mushrooms, walnuts, or even oysters instead. For many years, English ketchup was dark brown, not red.
Tomatoes finally joined the recipe in the early 1800s in America. At first, some people were afraid of tomatoes because they thought they were poisonous. A doctor named James Mease was one of the first to add tomatoes to ketchup in 1812.
In 1876, Henry Heinz started selling tomato ketchup in glass bottles. His ketchup became famous around the world. Today, the Heinz company sells about 650 million bottles of ketchup every year.
So next time you put ketchup on your fries, remember: you are tasting a sauce that traveled from Chinese fishing boats, through British kitchens, all the way to your dinner table.
