A kissaten is an old-style Japanese coffee shop where each cup is brewed by hand.
Kissaten are independent coffee shops, many dating from the mid-twentieth century, with dark wood, velvet seats and a master behind the counter brewing each cup by hand. They serve thick-cut toast, egg sandwiches and cream soda, and they expect you to stay a while.
参As a short speechスピーチ・英作文
A kissaten is not a cafe in the modern chain sense. It is an independent coffee shop, often opened decades ago and run by one person, with dark wood, low lighting, velvet or vinyl seats and Showa-era decor, and a counter where each cup is brewed individually with a cloth or paper filter.
The coffee is usually dark-roasted and served in a proper cup with a small jug of cream. The food is a fixed repertoire: thick-cut buttered toast, an egg salad sandwich with the crusts off, spaghetti napolitan, pudding, and cream soda with a scoop of ice cream.
In Nagoya and the surrounding region, morning sets give you toast and an egg free with your coffee before eleven, a custom worth planning a breakfast around. What makes a kissaten worth seeking out is the pace. Nobody will hurry you, the music, if any, is kept low, and the whole room is arranged around sitting with a cup for an hour.

In one line
In 30 seconds
As a short speech
Questions people actually ask
QHow is it different from a chain cafe?
AOrder at the table rather than a counter, pay when you leave, expect table service, and expect the coffee to be brewed for you rather than poured from a batch. Coffee often costs a little more than at a chain.
QWhat is a morning set?
AA custom strongest around Nagoya: order coffee before about eleven and toast, an egg or a small salad comes with it at no extra charge. Competition between shops made the sets increasingly generous.
QCan I work on a laptop there?
ASometimes, but many kissaten have no power sockets or wifi and quietly prefer conversation or reading. Check for a sign, and a full-day laptop session is better suited to a chain cafe.

Background
