Bettarazuke is a Tokyo pickle of daikon radish cured in sweet rice koji.
Bettarazuke is a white, lightly sweet pickle made from daikon radish. The radish is first salted, then pickled with rice koji, the same mold used to make sake and miso, along with sugar. Unlike takuan, the yellow daikon pickle, the radish isn't dried first, so it stays juicy and crunchy. It's closely tied to the Bettara Market held in Nihonbashi, Tokyo, every October.
参As a short speechスピーチ・英作文
Bettarazuke is a pickle from Tokyo, and the name sounds a bit funny even to Japanese ears. It's made from daikon radish, which is first salted and then pickled with rice koji and sugar. Koji is the mold that Japanese cooks also use to make sake, miso and soy sauce, and here it gives the pickle a mild sweetness.
Because the radish isn't dried first, the way it is for yellow takuan, it stays white, juicy and crunchy. The name probably comes from the sticky koji left on the surface, since betta-betta means sticky, though there's another story about sellers who joked about smearing koji on people's sleeves.
Every year on October 19th and 20th, the Bettara Market is held around a small shrine in Nihonbashi, and it is said to go back to the Edo period. Stalls sell bettarazuke by the piece, and the whole street smells sweet. If you like pickles that aren't too salty or sour, this is a good one to start with.

In one line
In 30 seconds
As a short speech
Questions people actually ask
QIs it the same as the yellow pickle I see in bento boxes?
ANo. The yellow one is takuan, which is made from dried daikon and is saltier and chewier. Bettarazuke uses fresh daikon and koji, so it's white, sweet and juicy.
QShould I wash off the koji before eating it?
AMost people just wipe off some of it, or rinse it lightly, and then slice it thin. Leaving a little koji on is fine, because that's part of the flavor.
QCan I take it back home?
AIt's a fresh pickle, so it needs to be kept cold and doesn't last long. Also, many countries have rules on bringing in food, so check before you pack it.

Background
