Sencha is the everyday green tea of Japan, made from tea leaves that are steamed, rolled and dried.
Sencha is the most common kind of green tea in Japan, making up nearly half of all the tea produced. The fresh leaves are steamed right after picking, then rolled and dried into thin, needle-like leaves. Steaming keeps the color green and gives a fresh, grassy taste. It's served at home, at work and in many restaurants, usually hot and almost never with sugar.
参As a short speechスピーチ・英作文
When Japanese people say "ocha," or tea, they usually mean sencha. It's the everyday green tea you get at home, at the office, and in many restaurants, and it makes up nearly half of all the tea Japan produces. What makes sencha different from most Chinese green teas is how it's processed.
Right after picking, the leaves are steamed instead of pan-fired. This stops them from changing color and keeps a fresh, slightly grassy flavor. The leaves are then rolled and dried until they look like thin green needles. To make a good cup, you shouldn't use boiling water.
Water that has cooled a little brings out the sweetness and keeps the tea from getting too bitter. Some regions, like Shizuoka, steam the leaves longer to make fukamushi sencha, which is darker and smoother. Fewer families brew tea in a teapot these days, and bottled tea is everywhere, but I think a freshly brewed cup of sencha still tastes like home.

In one line
In 30 seconds
As a short speech
Questions people actually ask
QWhat's the difference between sencha and matcha?
AWith sencha, you soak the leaves in hot water and then throw them away. Matcha is made from shade-grown leaves ground into a fine powder, so you whisk it into the water and drink the whole leaf. That's why matcha tastes stronger and is more expensive.
QWhy shouldn't I use boiling water?
AVery hot water pulls out more of the bitter and astringent taste. Many people let the water cool a little first, often to somewhere around 70 to 80 degrees Celsius. It's not a strict rule, though, and tastes differ.

Background
