Binchotan is a very hard white charcoal that burns hot and long with little smoke.

Binchotan is a type of white charcoal made mostly from ubame oak, a tough evergreen tree. At the end of firing, the glowing wood is pulled out of the kiln and smothered with a mix of ash and soil, which gives it a pale gray surface. It burns steadily for a long time with little smoke or smell, so restaurants that grill yakitori, or chicken skewers, and eel love it.

参As a short speechスピーチ・英作文

If you've ever had yakitori, or grilled chicken skewers, at a good restaurant in Japan, there's a good chance it was grilled over binchotan. Binchotan is a kind of white charcoal, and the best-known type comes from Wakayama, south of Osaka, where it is made mainly from ubame oak.

The wood is baked slowly in a kiln for several days. At the end, the heat is raised, and the glowing pieces are pulled out and smothered with a mix of ash and soil. The result is charcoal so hard that two pieces knocked together ring almost like metal.

It's hard to light, but once it's going, it gives a strong, steady heat for hours, with very little smoke or smell. That's why chefs like it for grilling meat and fish. When I explain it to visitors, I let them hear that clear ring. They understand right away that this is not ordinary barbecue charcoal.

In one line

In 30 seconds

As a short speech

Questions people actually ask

QWhy is it called binchotan?

AThe name is said to come from Bitchuya Chozaemon, a charcoal dealer in the Tanabe area of Wakayama in the Edo period. He sold this charcoal to Edo, today's Tokyo, under the name binchotan.

QIs it the same as the charcoal I use for barbecues at home?

ANot really. Ordinary charcoal is usually black charcoal, which is put out by sealing the kiln. Binchotan is white charcoal, much denser and harder, so it's slow to light but lasts much longer.

QWhy do some people put a stick of it in their water or rice?

ASome people put a piece in a water jug or the rice cooker because they feel it makes the taste milder. It's a popular household use, but how much difference it really makes is debated, so I wouldn't promise anything.

Background
